From The Rogue Creamery's inauspicious beginnings in 1935 has come one of the finest artisan cheese operations in the world today. In 2002, Ig (Ignazio "Ig" Vella, affectionately known as the Godfather of artisan cheese) hand selected Cary Bryant and David Gremmels as the new owners of what is now known as The Rogue Creamery. Of utmost importance was to carry on the tradition of hand-milled cheese. Bryant and Gremmels hit the ground running. Within a year, they were producing award-winning cheeses.This cheddar brings together the cheese of Rogue Creamery, the beer of Rogue Brewery, and the Japanese traditions of the master himself, Chef Masaharu Morimoto. Rogue's signature cheddar is washed in Morimoto Soba Ale, which is part of the new Signature Series of Rogue Ales. These ales were launched in the Spring of 2003 with internationally acclaimed Chef Masaharu Morimoto--a James Beard awarded chef and one of the stars of the Food Network series, Iron Chef.Soba (also known as buckwheat) is not a type of wheat but a member of the rhubarb family (a fruit, not a grain!) Soba has been a longtime staple of Japanese cuisine because of its nutritional value. Buckwheat is high in potassium, phosphorous, vitamin B (50 percent more than wheat) and protein, and its virtually fat-free. This Soba is infused throughout the cheddar, giving it a slightly tangy, yeasty flavor, as well as a very smooth, rounded finish.
